Ready to make baked chicken with cheesy tomato rice? Let's dive in! Get your ingredients prepped and let's get cooking!
- Pre heat the oven to 180C.
- Heat a frying pan over a medium-high heat. Season the chicken thighs with salt and pepper then cook in the pan for 2-3 minutes each side, or until browned.
- Remove the chicken from the pan then add in the oil from the tomatoes and the mushrooms. Cook for 2 minutes, or until the mushrooms are softened.
- Stir in the rice, semi dried tomatoes, tomato sauce and Parmesan cheese. Top with the chicken thighs then cook in the oven for 25-30 minutes, or until the chicken is cooked through.
- Remove from the oven and garnish with extra Parmesan and basil leaves before serving.
- Serve and enjoy!
