Instructions
Ready to make chicken & mushroom hotpot? Let's dive in! Get your ingredients prepped and let's get cooking!
- Heat oven to 200C
- Place chicken into an oiled saucepan on a medium heat until cooked through.
- Once cooked place to one side
- Place butter in a medium sized saucepan on medium heat
- Add onion and cook for 5 minutes
- Add mushrooms
- Stir in flour to make roux
- Stir well on a low heat for 2 mins and then take of the heat
- Slowly add chicken stock stirring continuously
- Add salt and pepper, nutmeg and mustard powder
- Place back onto medium heat and bring to the boil, stirring
- Once thickened turn down to a low heat
- Add chicken, sweetcorn, peas, carrots, broccoli and stir in
- Pour into a well greased dish
- lay sliced potatoes on top, overlapping
- Brush with melted butter and cook for 35 minutes
- Serve and enjoy.
