Ready to make Couscous and roasted vegetables? Let's dive in! Get your ingredients prepped and let's get cooking!

  1. Preheat oven to 220C.
  2. Place capsicum, zucchini and onion into a backing tray. Drizzle with oil and toss to coat.
  3. Bake for 20 minutes.
  4. Add water to saucepan and bring to the boil on a medium heat.
  5. Add couscous to the pan, take of the heat, cover and let the couscous steam for 5 minutes.
  6. When you remove the lid the couscous will appear flat and even. Fluff it up with a fork.
  7. Add cooked vegetables to cooked couscous
  8. Season with salt and pepper.
  9. Serve and enjoy.
