Ready to make Couscous and roasted vegetables? Let's dive in! Get your ingredients prepped and let's get cooking!
- Preheat oven to 220C.
- Place capsicum, zucchini and onion into a backing tray. Drizzle with oil and toss to coat.
- Bake for 20 minutes.
- Add water to saucepan and bring to the boil on a medium heat.
- Add couscous to the pan, take of the heat, cover and let the couscous steam for 5 minutes.
- When you remove the lid the couscous will appear flat and even. Fluff it up with a fork.
- Add cooked vegetables to cooked couscous
- Season with salt and pepper.
- Serve and enjoy.
