Ready to make easy beef casserole? Let's dive in! Get your ingredients prepped and let's get cooking!
- Preheat oven to 180C. Mix flour with salt and pepper. Lightly coat steak in the seasoned flour.
- Heat 1 tbsp oil in a frying pan over medium/high heat. Cook steak in small batches for 2 minutes at a time until browned.
- Place cooked steak in a large casserole dish.
- Into the frying pan add the rest of the oil along with the leeks, capsicum and garlic. Cook over medium heat for 3 to 4 minutes.
- Add tomatoes, tomato paste, vinegar, mustard and chopped thyme. Bring to the boil and pour over the steak.
- Bake with dish covered for 2 hours so that the meat is tender. Add salt and pepper to taste. Garnish with thyme.
