Preheat oven to 425°F. Place bell pepper, zucchini and onion into a baking tray. Drizzle with oil and toss to coat. Bake for 20 minutes. Add water to saucepan and bring to the boil on a medium heat. Add couscous to the pan, take off the heat, cover and let the couscous steam for 5 minutes. When you remove the lid the couscous will appear flat and even. Fluff it up with a fork. Add cooked vegetables to cooked couscous Season with salt and pepper. Serve and enjoy.
