Combine peanut oil, soy sauce and oyster sauce in small pitcher or bowl. Heat a wok over high heat until hot. Add sesame oil then ground chicken. Stir-fry for 3-4 minutes, breaking up meat, until the chicken is just cooked through. Save 1/3 of the green onions, thinly sliced for garnish. Add remaining green onions, finely grated ginger, garlic cloves, medium button mushrooms and can water chestnuts to chicken. Stir-fry for 2 minutes. Add combined sesame oil sauce, stirring until heated through and sauce thickens slightly. Stir through fried noodles. Divide chicken mixture evenly among 10 small iceberg lettuce leaves, washed, dried, trimmed. Top with sesame seeds, crushed peanuts and saved green onions. Serve and enjoy!
