Ready to make sausage & potato casserole? Let‘s dive in! Get your ingredients prepped and let‘s get cooking!
Cook the potato in a saucepan of boiling water for 10 minutes or until tender. Drain well. Return to the pan. Meanwhile, heat 2 teaspoons oil in a pan over medium heat. Add sausages and cook, turning, for 4-5 minutes or until browned. Transfer to plate. Set aside to cool. Cut into 1¼ inch pieces. Heat the remaining oil in the frying pan. Add the onion and cook for 2-3 minutes or until onion begins to change color. Add chili, if using and cook for 1 minute or until aromatic. Add the tomato, potato and sausage. Fill the empty tomato can with water and add to the pan. Stir to combine. Bring to the boil. Reduce heat to low and simmer for 6-8 minutes or until the sausage is cooked through. Add the peas and cook for 1 minute or until heated through. While the casserole is cooking, heat the garlic bread following packet directions. Serve with the casserole.
